Irish Coffee Cupcakes
Ingredients: - 240g butter, room temperature - 240g caster sugar - 4 eggs, lightly beaten - 2tsp Odlums Baking - 300g Odlums Cream Plain Super Flour - 250ml milk - 6 tbsp Warbler & Wren Coffee in 125ml of water For the frosting: - 1000ml double cream, chilled - 8 tbsp Whiskey - 400g Cream Cheese Instructions: 1. Preheat the oven to 180’C. 2. In a bowl add the butter and sugar and beat together. Add the eggs one by one and beat them in. 3. Add the baking powder and flour and fold in with a spatula. 4. Then add the milk and coffee until dropping consistency. 5. Place into the cupcake tins and bake for 20mins. 6. While baking make the frosting by whipping the cream and then adding the cream cheese and whiskey. Place into a piping bag with a nozzle and into the fridge to chill. 7. Once the cupcakes are baked and chilled, pipe on the icing and dust with coffee. Enjoy.
